chore!: remove ensure_installed='maintained'
Removes all support (and tests) for the parser category "maintained", as
this is no longer a useful category.
BREAKING CHANGE: replace `ensure_installed='maintained'` by an explicit
list of parsers, or use `'all'` (not recommended).
